Easy Peasy Perfect Pancakes

It's pancake day.  I have been making pancakes year in year out and this is my favourite recipe...




You will need:

200g Plain flour
3 eggs
200ml milk
a pinch of salt

Butter for frying.

You will also need:
A frying pan
A measuring jug
Kitchen scales
A large bowl

Method...

STEP ONE

Measure out the flour and the salt and put in a large bowl.

STEP TWO

Make a well in your flour.  Add the eggs and stir into the flour, it will make a paste.

STEP THREE

Add the milk bit by bit, whisking it in so it is smooth.  Do this until you have used all the milk up.

STEP FOUR

Heat your pan over a medium heat, or flame if you are cooking on gas, for a few seconds,  Smear butter over the pan so there is not too much of it in the pan.


Too much butter will make for a greasy pancake, too little and your pancake will stick to the bottom!

STEP FIVE


Pour in a ladle full of your pancake batter.  Swirl it around on the bottom of your frying pan.  Leave until the top of the pancake no longer wet.  Then flip.  You may want to use a spatula if you aren't brave enough!  Ha!


STEP SIX


Cook for a few seconds the other side once the pancake is flipped then move your pancake onto a plate and add whatever filling you desire. Sugar and Lemon is my favourite.  What's yours?
